I'm definitely a fan of the honey-ginger type jerkies. Great snacks. A friend just sent me some jerky that was salted, and while it Will keep well, it's just not a very good snack. (perfect for soup he says).

So maybe you could try a few different recipes for different purposes.

Here's a site with a bunch of jerky recipes.  The meats are probably interchangeable.

I borrowed a dehydrator from someone and checked permies for some jerky recipes.  I'm surprised there are so few posts.  Must be because jerky is just this and that with some type of liquid and let sit for a bit.

I like the last recipe from the link though.  The lady says she's made her jerky by dehydrating in the oven with the pilot light on for 16 to 20 hours.

I'm interested in this question because I've been researching pemmican, and jerky seems to be its cousin. I didn't find many threads on it here, so I did a few searches and found a lot of good ideas.

Here's a website loaded with jerky recipes - Jerkyholic.com

An article and video ala Alton Brown - Beef Jerky Recipe

And some videos on various techniques.
