In Le Grand Froid (The Big Freeze) as the media called it, I found all my beetroot (beets?) covered in snow and frozen, though not frozen to the ground. I noticed that some 'thing' was nibbling the hearts out of them so I harvested all of the non-nibbled ones and brought them in to sit in the hall awaiting processing. But life got oh-so-busy as it does and I rediscovered them yesterday evening, looking very sorry for themselves and thought to myself that hubby would say they were now pig food. But hey, he's not here at the moment. So I peeled them all and I have processed 8.5kgs (19lbs) of beetroot this morning. Now we have Beetroot and Orange Chutney in the store cupboard, Thyme and Rosemary Roasted Beetroot in the freezer, and a whole load of sliced beetroot doing wild fermentation ready to make Borscht from the juice and Pickled Beetroot from the slices. Pig food? Not likely!!!

They did get all the trimmings however and they all have red noses now One happy homestead

ummm the thyme and rosemary roasted ones really sound yummo, I LOVE BEETS..I was one of those crazy kids whose favorite veggies were beets and spinach..

I'm one of those people who grew up hating beets. My only experience with them was the canned ones in the school cafeteria. Years later, I experienced home grow beets in a salad. To be polite to the hostess, I ate them. And, WOW they were good. I now love them (but not the commercial canned ones).

I am glad that you managed to 'save' them. Your pigs probably wish you hadn't.

The only annoying bit is that I have to wait a few days for the wild fermentation process to be done, and wait a few weeks for the chutney to mature. I want to eat them NOW.

No, I didn't like beetroot much as a child (again, shop bought pickled stuff) but then I had roasted fresh ones and I was converted but not til I was 20!

Pretty much my favourite flavour combination is beetroot, goats cheese and walnuts.
No goat's cheese? Oh alright, blue then. No walnuts? Well, hazenuts are nice, I suppose. No beetroot? Damn. I'll have to make do with a beurre bosc pear then.
Ok, I admit it, my favorite flavour combination is food X + food Y + food Z
