Meaty "cinnamon rolls" with bacon

Alright, so while they may not look like cinnamon rolls, they are inCREDibly delicious!!
It is an herby-oniony meatloaf rolled with cinnamon-clove-nutmeg-ketchupy bacon, topped with a mayo-lemon-maple-cinnamon "icing."

First, I mix the meatloaf ingredients: 1 lb ground beef, a good squirt (1/8 cup or so) of ketchup, herbs and ground pepper (I use plenty of sage and rosemary, sometimes thyme), and about 1/4 cup potato flakes.

I then add 1 fried-carmelized onion - in butter of course And mix.

On the side, I mix together a good squirt of ketchup (1/8 cup or so), and at least a teaspoon each of cloves, nutmeg, and cinnamon. I do a little extra cinnamon.

Next, I lay a strip of bacon on the cooking sheet, and smooth a layer of the ketchupy mixture across it.

Next, mold some meatloaf meat in a strip on top of the bacon, and roll under like so:

Roll #1. 1 lb meat should make about 9 rolls. And feel free to top off any rolls with extra ketchup sauce that may be leftover when you're done.

It is mostly mayo. I use about 1/2 cup mayo, 1 tablespoon lemon juice, and 1 teaspoon or less of maple syrup and cinnamon.
