Lemon Balm Popsicles

I received this recipe in my email this am & thought I'd pass it along. Sounds like a "cool" idea.

Lemon Balm
Hot water
Honey or sweetener of your choice.

Cut up enough Lemon Balm for two loosely packed cups of plant material or 4 tablespoons of dried lemon balm and add it to a half-gallon jar.

Fill the jar with boiling water, and let it steep for about 20 minutes.

Strain and add honey to taste. The recipe recommends 2 Tbsp

Pour into popsicle molds or into ice cube trays.

Freeze for a few hours and enjoy

Lemon Balm is soothing and calming. This recipe could possibly be used with other herbs if you know their properties. Any ideas?

I think sweetening it with honey and adding chamomile or mint would be tasty. very nice for a hot summer evening when a calming tea would be nice but a steaming cup of anything would not.
